BROCCOLI AND PEAS STIR FRY


Broccoli belongs to the cabbage family and is rich in nutrients like beta carotene and vitamin C. It reduces the risk of cancer, heart disease and also reduces blood pressure.

NOTE: Broccoli retains its nutritive value when cooked crunchy. Broccoli should not be steamed or boiled for more than 3-5 minutes. Overcooking will decrease its nutritional value. Perfectly cooked broccoli has a bright green colour.

INGREDIENTS:

Broccoli - 1
Shelled peas - 1/4 cup
Salt - as per taste
Cumin seeds - 1/8 tsp.
Green chillies - 2 (slit)
White pepper powder - 1/4 tsp.
Butter - 2 tsp.
Parsley - for garnishing (optional)

METHOD:

Wash and cut the broccoli to florets.

Heat a pan, melt butter, add the cumin seeds. When it sizzles, add the green chillies, peas, broccoli and salt. Sauté on a high flame for a minute. Sprinkle little water, simmer the stove and cook it covered till crunchy. Add white pepper powder , give a quick sauté, garnish with parsley and serve hot.

    the broccoli doesnt get cooked wel wen we try the way u have said here ... it just half the way ..though even covered with lid it doesnt cook fully atleast not even 90% in the time u have mentioned here ..i have tried twice ...went in vain..do u have any other solution for this ..pl let us know ..i thnk i shudnt lose the nutrition from that veggie ... BTW today mrng i tried ur masala idly and it was awesome .. usually i used to go with kaima idly for the last set of idly batter , this time it was ur recipe whch made the breakfast a delicious one ..thanx and regards

  16. Shobi, brocolli loses its nutrition when overcooked. It should be crunchy and cooked, Another way is to cut the brocolli through the stems and ensure the stems are thinner and like slices. If you do like that,it will be cooked as said. If the stems are thick, you will end up in vain. Try it next time.
