SABZIAN KI BHAJI (MIXED VEGETABLE CURRY) (NORTH INDIAN STYLE)


INGREDIENTS:

Mixed veggies - 3 cups ( I used cabbage, carrot and shelled peas)
Cumin seeds - 1 tsp.
Mustard seeds- 1/8 tsp.
Turmeric powder - 1/4 tsp.

Ginger- green chilli paste - 1 tsp.
Chilli powder - 1/4 tsp. 
Dhania powder - 1 tablespoon
Garam masala - 1 tsp.
Oil - 1 tablespoon
Hing (asafoetida powder)
Salt - as per taste
Curry leaves - a sprig
Chopped coriander leaves - 1 tablespoon

METHOD:

Chop veggies finely. 

Heat oil in a wok, temper with mustard seeds, cumin seeds and turmeric powder. Add the ginger-green chilli paste. Saute for 10 seconds. Add chopped veggies, chilli powder, dhania powder, hing and salt. Sprinkle water and cook covered till done ( Should not be mushy). Take off the lid and add garam masala. Add finely chopped coriander leaves. Give a quick saute and switch off the flame.  Serve hot.

Tastes heavenly with phulkas, pooris, rotis and theplas. Can also be had as a side dish for south-indian meals.
