INGREDIENTS:
Very tender green chillies - 50 gms.
Tamarind - a lemon size
Salt - as per taste
Oil - 1/2 ladle
Turmeric powder - 1/4 tsp.
Mustard seeds - 1/4 tsp.
Urad dhal - 1/2 tsp.
Hing
METHOD:
Slit the green chillies, heat a tablespoon of oil and saute the green chillies till the colour changes, with white spots in it and the raw smell is diffused. Grind it alongwith salt and tamarind to a fine paste. Again, heat the remaining oil, temper with mustard seeds, urad dhal, hing and turmeric powder. Add in the ground paste and saute well till oil leaves the sides. This can be preserved even for a month if sauted well with oil. It can also be refrigerated.
NOTE: THE CHILLIES SHOULD BE VERY TENDER. YOU CAN SOAK THE TAMARIND IN WATER AND USE THE VERY THICK EXTRACT. BUT FOR GETTING A PERFECT TEXTURE USE THE TAMARIND DIRECTLY WHILE GRINDING SUBJECT TO THE QUALITY OF THE PRODUCT.
Do we soak the tamarind in water, then add its extract to grond chillies and salt to a fine paste, or do we add it directly? If we add it directly, won't there be some straw and dirt with it?
ReplyDeleteYou can soak in water and take a thick extract also. But to get a perfect texture grind it directly. Most of us buy quality products only nowadays. So don't worry. I will also add it as a note for reference.

ReplyDeletewhat a wonderful colour, mouthwatering, I learnt this from my Maami,I used to make it when I was in India, my MIL used to do it most of the times, but she wouldn't use any dal seasoning and used to add a bit of jaggery, My H likes it he sometimes buys in the shop, I do not prepare it at home, I am scared my son eats too much of pickles and spicy food. An other friend from who is a north Indian told me that they make like my MIL and eat it almost everyday and even in north of karnataka people eat it raw say that it is rich in vitaminc C and is good for health! your thokku is simply tickling my senses, lovely click..,
